Make yourself at home at our all-organic cafe

Purely cafe is situated in a renovated Japanese home built 140 years ago. The interior is accented with traditional stonework and our chefs make sure to use only the finest, naturally grown (fertilizer- and chemical-free) rice and vegetables in our expertly seasoned dishes. We focus on bringing out the natural flavors of the ingredients and hope our cooking style will provide hints for your own home cooking.

We use naturally grown (fertilizer- and chemical-free) rice and vegetables grown with love on Kyushu, as well as heirloom produce grown with family-managed seed stocks.

The finest meat and fish

Our natural pork, Amakusa Daio chicken, and Kusa Ushi beef are from animals raised in as stress-free an environment as possible. The animals are raised with no antibiotics or genetically modified feed in wide open pastures in Kumamoto. We also select naturally caught fish, and we make efforts to provide fish caught locally.

Natural cultivation and top-grade soil

Naturally grown produce is grown without pesticides, chemical fertilizers, and even without organic fertilizers. By respecting and learning from nature, farmers are able to derive the finest results from the seeds they plant.
Instead of providing fertilizers, the plants are made to spread their roots in order to absorb the moisture and nutrition they need to survive naturally. To promote this, the farmers put extra care into the soil so that the soil holds enough moisture and that it is soft and warm enough for plants to spread their roots easily.

Fermented foods form an important part of traditional Japanese cooking, and we take special care with the microbes we use in fermenting. Natural microbes is a term used for a variety of wild microbes found in nature. Traditional Japanese fermented foods harness the natural power of these microbes to produce new foods.
